  • Refined Sugar Free Strawberry Cheesecake

  • Ingredients:

    Base ingredients 

    1)  140g ground almonds     

    2)  three quarter of a cup of desiccated coconut   

    3)  8 large dates                             

    4)  Pinch of salt                     

    5) 1 tbsp melted coconut

    Filling

    1) 3 egg whites

    2) one cup of coconut sugar

    3) one punnet of strawberries

    4) one tbsp of lemon juice

    5) one tbsp of vanilla essence

  • Instructions:

    1)  Place all the base ingredients in a blender and blend until crumbly.  Press into a spring form cake tin.

    2)  Bake it in the oven for 15 minutes.  Remove and cool before adding the filling.

    3)  Place filling ingredients in a clean blender and blend until fluffy about 15 minutes.

    4)  Pour into base and freeze four hours.

    5)  Remove and place on a plate and top with fresh strawberries, blueberries and raspberries.  Delicious. 

    Serves 8- 10.
