  • Christmas Couscous Salad – Serves 10

  • Ingredients:

    1)  One packet of Couscous

    2)  One packet of dried cranberries

    3)  Two cups of freshly chopped herbs

    4)  Two cups of sundried tomatoes

    5)  Two cups of toasted walnuts

    6)  One teaspoon of herb yeast salt (available from my clinic or web page)

    7)  Juice and zest of two lemons

    8)  One cup of olive oil

  • Instructions:

    1)  Place the couscous in a pot and cover with boiling water.  Cook for one minute and then fluff with a fork. 

    2)  Place in a bowl and fluff again with a fork to separate grains.  Add all other ingredients and stir well.  Place in the refrigerator until ready to serve.

  • Serve this delicious Couscous Salad with new potatoes, ham or salmon or barbequed meat and you have Christmas organised.
